Breakfast Burrito Calories

These breakfast burritos are for all you weekend chefs like me. On weekends, and on a few other occasions, we dads sometimes like doing a little cooking for our families. This is a very basic and easy-to-prepare recipe. Your family will be mystified and amazed at your culinary abilities. Around our house, this is always a brunch-time meal, although you could also prepare at breakfast time.

While the recipe below serves as a basic template for the burritos, this dish can be made using a variety of fresh and prepared filling ingredients.

Breakfast Burritos

Ingredients:

  • 1 pound of sausage or bacon
  • Eggs
  • Burrito-size flour tortillas
  • 1 2-cup bag of shredded "Mexican" four cheese blend (medium cheddar, Monterey Jack, asadero and queso quesadilla)

Directions:

  1. Over medium heat, cook the sausage or bacon first in a medium skillet. If you prefer bacon, cook the slices whole. Drain grease from skillet.
  2. If you are cooking bacon, remove it from the skillet. If you prefer sausage, leave it in the pan.
  3. While cooking bacon or sausage, break eggs into a bowl. Mix with a fork as you would prepare scrambled eggs.
  4. Over medium heat, mix eggs into skillet and cook, stirring constantly. Do not overcook, or the eggs will be too dry.
  5. Place a tortilla on a microwaveable plate (not a paper plate). Place grated cheese on the tortilla. Use enough to put a generous circle of cheese covering about 1/2 of the burrito.
  6. Microwave the tortilla with the cheese for 30 seconds.
  7. Remove plate and put egg and meat mixture on tortilla. Place on bottom half and leave about 1 inch on both sides.
  8. If you cooked bacon, break the slices in half and place on top of eggs on the tortilla.
  9. Add a layer of shredded cheese on top of eggs and meat.
  10. Fold both ends of the tortilla in and roll from the bottom to the top. Serve.

Cooking Tips

  • If you can get fresh tortillas from a bakery or a grocery store, they will make a big difference.
  • To add a more "south of the border" flavor, add about 3 tablepoons of salsa to the eggs while cooking.
  • To make this burrito a little more "cheesy," you can blend in some extra cheese as you finish the scrambling.
  • To vary the recipe, you can scramble the bacon into the eggs and cheese.

The cheese and the salsa will add extra flavor to the burrito and moistness to your eggs.
